People & Training
- Support the training and upskilling of Team Members in the fish section
- Give real-time feedback and praise to the team during shifts
- Ensure uniform and PPE standards are consistently followed
- Use professional communication across both front and back of house
- Motivate the team by being a positive role model
- Guide new starters using the correct itsu training approach
Hospitality & Customer Focus
- Help drive a strong "customer first" mindset in the shop
- Maintain excellent mystery shopper scores through team focus
- Know and follow the 6 Hospitality Steps at all times
- Reduce queues through energy and pace, especially during peak periods
- Support with customer queries and issues when needed
Fish Quality & Kitchen Standards
- Own the fish section quality - from preparation to presentation
- Cut and prepare salmon to exact "How To" specifications
- Monitor fish freshness and follow FIFO (First In, First Out)
- Follow the bone removal process and maintain fish knife use, storage, and sharpening standards
- Keep fish section equipment clean and functional to itsu's "How To" guides
- Use the correct recipe and portioning tools (CTR and scales) every time
- Record and dispose of out-of-date products correctly
- Keep the fish section immaculately clean using CATC & CAYG methods
- Always follow 5FSF and 5FQF food safety and quality standards
- Complete Due Diligence Diary (DDD) sections accurately when required
- Be EHO-ready: confidently answer fish-related food safety questions during inspections
Profitability & Performance
- Follow production sheets and meet productivity goals in your section
- Accurately record all types of fish section waste, helping the team reduce it
- Raise and track fish-related maintenance and delivery issues promptly
- Monitor and follow up on stock levels in the fish section
- Understand and use shop reports to help reach fish section KPIs
- Ensure your section is always prepped and "set for success" according to itsu's standards

Previous kitchen or food-handling experience is helpful, but full training will be provided to help you succeed.
