Job description
Hotel Sous Chef – 4 days on / 3 days off

Salary: Up to £38,000 GBP

Location: Thorpeness, Suffolk

Accommodation: Provided on an all‑inclusive basis – weekly cost £71 GBP

Contract: Permanent – working 4 days on / 3 days off per week

Main duties and responsibilities
  • Deputise in the Head Chef's absence.
  • Ensure that all chefs des parties are familiar with the day's requirements.
  • Ensure that the necessary stocks are on hand at the right quality and quantity.
  • Maintain fair discipline and treat all staff with commonly accepted courtesy.
  • Keep timetables, leave rosters and attendance registers up-to-date.
  • Adhere strictly to all statutory and company hygiene regulations.
  • Report and follow up on all maintenance problems timeously.
  • Run smooth communications between restaurant and kitchen.
  • Deliver correct orders to the appropriate tables.
  • Check each dish leaving the kitchen for quality, quantity, presentation and correct temperature.
  • Ensure dining room staff are “standing by” when delicate dishes are served.
  • Carry out regular on-the-job training for subordinate staff.
  • Attend seminars and training courses as directed.
  • Advance managerial knowledge for future promotion and elevation of industry standards.

  • Ability to work a variety of shifts on a rota.

  • Mature and pleasant manner.
  • Team player.
  • Work under pressure in a busy kitchen.
  • Rosette experience would be advantageous.
