Description

V.Ships Leisure is looking for Executive Sous Chef on behalf Orient Express Sailing Yachts. The Executive Sous Chef oversees the management of all shipboard food preparation to ensure that the line’s high culinary standard of cuisine is maintained within the budgetary limitation established as company policy and in respect of the standards imposed by our culinary partners. The Executive Sous chef assists the Executive Chef in his duties. The Executive Sous Chef is responsible to ensure the guest and crew satisfaction of the food product. The Executive Sous Chef also ensure that staff is trained in order to provide the service necessary for the continued service we provide on board. The decisions made regarding food costs and waste management is imperative to the success of the company as well as team morale and support to the management.

Key Responsibilities
  • Assists the Executive Chef in his duties.
  • Ensures that all standard operation procedures are in place, adhered to and being followed throughout the ship.
  • Evaluates galley staff as per Orient Express personnel policy.
  • Assists in training sessions for galley staff that is involved in food preparation.
  • Oversees the care, treatment and training on galley equipment.
  • Controls inventory and maintenance records of durable (non-food) items.
  • Controls hours worked in his team. Ensures that overtime is kept to a minimum level.
  • Maintains log sheet of all liquors and wines for food preparation in galley.
  • Actively involved in yield and portion control in conjunction with Executive Chef.
  • Assists in training sessions for galley staff that is involved in food preparation.
  • Ensures that waste control is in place, grocery breakage minimized and garbage separation followed.
  • Assists loading on the pier that all-perishable food items are of highest quality before bringing on board.
  • Ensures USPH standards are respected throughout the galley operation.
  • Active participation in onboard training programs.
  • Additional duties, not mentioned here, will be expected as per management request.
Education/Experience/Qualifications
  • Languages: Fluent English.
  • Education: High school degree or related.
  • Culinary training mandatory.
  • Previous professional experience: 3 years in a similar capacity in a luxury culinary environment.
  • Shipboard experience: Yes.
  • Valid STCW certificates.
  • Valid Pre-Employment Medical.
  • C1D visa mandatory for all positions.
