Job description

As an apprentice Chef at Toby Carvery, you will learn to master our menu and contribute to the dining experience that keeps guests coming back. You'll thrive in a fast‑paced kitchen with a close‑knit team that values teamwork and quality.

Responsibilities
  • Champion brand standards and maintain kitchen cleanliness.
  • Prepare all necessary items before a busy shift.
  • Cook to specification using recipes and techniques such as poaching, simmering, steaming, boiling, braising, stewing, baking, grilling, and frying.
  • Regenerate dried and frozen ingredients and dishes.
  • Manage stock control, storage, and rotation.
  • Use equipment safely, following standard operating procedures for knives, boards, temperature monitoring, and allergen management.
  • Maintain prep and par levels according to business needs.
  • Communicate professionally with colleagues, line managers, stakeholders, and customers.
  • Work as part of a team to support service delivery and manage own time to ensure tasks are completed.
  • Use problem‑solving techniques for routine and non‑routine issues within scope.
  • Apply hygiene management techniques to maintain a safe, clean environment (COSHH, personal hygiene, uniform).
  • Reduce waste by measuring plate waste, practicing portion control, and maximizing yield.
  • Comply with health & safety, equity, diversity, and inclusion legislation and organisational policies.
  • Deliver key performance indicators to support production, performance, and budget in your area.
Qualifications

  • Basic understanding of functional skills in English and Maths (GCSE or equivalent preferred).
  • Commitment to obtaining the Chef Academy Production Chef Level 2 apprenticeship including functional skills in maths and English.
Apprenticeship Details
  • A mixture of face‑to‑face and Skype/phone catch‑ups every 4–6 weeks.
  • On‑the‑job and off‑the‑job training, including workshops and webinars.
  • Reviews every 12 weeks with the apprentice, line manager, and lifetime trainer.
  • Regular feedback sessions to discuss progress.
