Job Description

PRIMARY RESPONSIBILITIES:

  • Wash dirty wares using dishwashing machines according to prescribed procedures.
  • Remove cleaned wares from the dishwasher, sort them by kind, size, design, and outlet; scrape off food residue or soak stained ware with solution when necessary.
  • Wash and clean all used pots, pans, and other kitchen utensils.
  • Polish silverware for all functions and outlets.
  • Prepare and deliver clean wares, removing stains and deposits, and separate damaged items.
  • Collect empty bottles from the kitchen and outlets, sort them in the bottle room, and place them in proper containers; stock containers properly.
  • Maintain sanitation and hygiene in wet and dry garbage storage areas.
  • Keep service equipment such as cooling ranges, griddles, ovens, hoods, pots, pans, floors, walls, reach-in, and walk-in chillers clean and in order.
  • Deliver empty trash bins to kitchen areas and outlets; collect filled bins and empty them in the garbage room.
  • Prepare equipment for outside catering and related functions.
  • Monitor and record the temperature of dishwashing machines in the Temperature Control Sheet.
  • Ensure proper use and dilution of cleaning detergents and chemicals according to MSDS to prevent wastage.
  • Operate dishwashing, glass washing, decarbonizing, scrubbing machines, wet vacuum, and other stewarding equipment for hygiene and cleaning purposes.
  • Clean and maintain orderliness in assigned areas and with work equipment such as kitchens, food prep areas, garbage and bottle rooms, dishwashers, sorting tables, sinks, trash cans, and other equipment.
  • Ensure guest satisfaction and promote the hotel's image by providing excellent cleaning and sanitation of all equipment and tableware in restaurants, bars, and guest areas.
  • Maintain grooming standards as per Dusit policy.
  • Report to work on time and communicate important information from previous shifts.
  • Participate in training and meetings organized by hotel management to improve skills and knowledge.
  • Perform other duties as assigned by supervisor.
