What you’ll do


  • Develop, implement, and monitor hygiene policies and procedures in line with HACCP standards and local regulations.

  • Conduct regular inspections of kitchens, restaurants, bars, and storage areas to ensure compliance with hygiene and sanitation standards.

  • Lead internal and external audits, maintaining accurate records and ensuring timely corrective actions.

  • Train and coach culinary, stewarding, and service teams on hygiene practices, safe food handling, and sanitation procedures.

  • Manage pest control programs, chemical usage, and sanitation equipment.

  • Collaborate with Culinary and F&B teams on menu development, food storage, and preparation processes to ensure compliance.

  • Monitor water safety, environmental hygiene, and waste management across the property.

  • Stay updated on global best practices, local authority regulations, and emerging trends in food safety and hygiene.

  • Report regularly to senior leadership on compliance status, risks, and improvement initiatives.

  • Champion a culture of safety, sustainability, and accountability across the property.


Qualifications


  • Bachelor’s degree in Food Science, Environmental Health, or related field.

  • Certified in HACCP implementation; additional certifications in ISO, food safety, or hygiene management are an advantage.

  • Minimum of 5 years’ experience in a hygiene or HACCP management role, preferably within luxury hospitality.

  • Strong knowledge of local and international food safety standards and regulations.

  • Excellent communication, training, and leadership skills.

  • Detail-oriented with strong organizational and auditing abilities.

  • Ability to work collaboratively with diverse teams and lead change effectively.
