PROCESS ENGINEER

OVERVIEW

The Process Engineer plays a key role in scaling and optimizing plant‑based and alternative protein food manufacturing at Nurasa. This position supports development of culinary products and also the transition of innovative protein concepts—such as plant‑based meat and dairy alternatives, protein‑rich ready‑to‑eat foods, and functional ingredients—from pilot scale to commercial production.

Working closely with R&D, Quality, Operations, and external co‑manufacturers, the Process Engineer ensures that processes are robust, cost‑effective, scalable, and fully GMP‑compliant, supporting Nurasa’s goal of building sustainable and future‑ready food platforms in Singapore and the region.

1. Process Development, Scale‑Up & Optimization
  • Support scale‑up of plant‑based and alternative protein products from lab or pilot scale to commercial manufacturing.
  • Translate product formulations into manufacturable processes, with focus on texture, yield, sensory performance, and nutritional consistency.
  • Develop and optimise processing parameters for unit operations such as mixing, hydration, emulsification, thermal processing, extrusion, forming, and packaging.
  • Support equipment selection, trials, and commissioning for alternative protein processing lines.
  • Lead or support first production runs and troubleshoot start‑up and scale‑up challenges.
2. Technical Transfer & Manufacturing Support
  • Facilitate technical transfer from R&D to internal manufacturing or external co‑manufacturers.
  • Prepare and maintain detailed process documentation including SOPs, process flow diagrams, and critical control parameters.
  • Train production teams on new plant‑based processes, ingredients, and equipment.
  • Act as a technical point of contact with co‑manufacturers, ingredient suppliers, and equipment vendors.
3. Quality, GMP & Food Safety Compliance
  • Ensure all plant‑based manufacturing processes comply with GMP, HACCP, and relevant GFSI standards (ISO 22000 / FSSC 22000).
  • Support investigations into process deviations, quality issues, and sensory or functional product failures.
  • Implement corrective and preventive actions to ensure consistent product quality and food safety.
  • Participate in audits, validations, and continuous improvement initiatives related to alternative protein manufacturing.
4. Continuous Improvement, Cost & Sustainability
  • Drive continuous improvement projects to improve yield, throughput, and cost efficiency of plant‑based processes.
  • Support waste reduction, water and energy efficiency initiatives aligned with Nurasa’s sustainability objectives.
  • Conduct process risk assessments and ensure compliance with workplace safety and environmental regulations.
  • Support evaluation and adoption of new technologies and ingredients relevant to alternative protein production.
  • Perform other duties as assigned by the direct supervisor.
Job requirements
  • Diploma or Bachelor’s Degree in Food Engineering, Chemical Engineering, Food Technology, or a related discipline.
  • 3–5 years of experience in a food manufacturing environment, preferably with exposure to plant‑based, alternative protein, or high‑moisture food products.
  • Strong hands‑on GMP experience in regulated food production environments.
  • Working knowledge of HACCP and GFSI standards (ISO 22000 / FSSC 22000).
  • Experience with process scale‑up, optimisation, and technology transfer in food manufacturing.
  • Familiarity with plant proteins, functional ingredients, and texture‑driven food processes is an advantage.
  • Strong analytical, troubleshooting, and problem‑solving skills.
  • Able to work cross‑functionally with R&D, Quality, Operations, and external partners.
  • Proficient in Microsoft Office applications.
  • Self‑driven, adaptable, and comfortable in a fast‑growing, innovation‑focused organisation.
