Day-to-Day Responsibilities
- American Cuisine Expertise: Demonstrate advanced knowledge of American fine dining, including classic and modern culinary techniques.
- Menu Development: Design and curate authentic and contemporary American menus that resonate with guests, incorporating seasonal ingredients and innovative presentations.
- Kitchen Leadership: Oversee daily kitchen operations, ensuring efficiency, consistency, and exceptional food preparation. Lead, mentor, and develop kitchen staff, fostering a collaborative and positive work environment.
- Quality Control: Maintain the highest standards of food quality, presentation, and taste. Implement and uphold strict hygiene and sanitation protocols in compliance with local health regulations.
- Inventory Management: Monitor inventory levels, conduct regular stock checks, and liaise with suppliers to source premium ingredients. Manage food costs and minimize waste through effective planning and forecasting.
- Collaboration: Work closely with the Food & Beverage Manager and other department heads to ensure seamless service delivery and enhance guest satisfaction. Participate in menu tastings, promotional events, and contribute to marketing initiatives.
Morning Routine
- Early Start: Begin the day early to prepare fresh ingredients and mise en place for breakfast and lunch service.
- Preparation and Setup: Organize workstations, ensuring all tools and ingredients are ready for use.
Production
- Cooking: Prepare and cook a variety of American fine dining dishes, including steaks, seafood, and signature specialties.
- Recipe Execution: Follow established recipes and techniques to ensure consistency and quality.
- Special Orders: Handle custom requests for events or specific guest preferences.
Quality Control
- Tasting and Testing: Regularly taste dishes to ensure they meet the highest quality standards.
- Presentation: Focus on the aesthetic appeal of dishes, ensuring they are beautifully plated for service.
Collaboration
- Team Coordination: Work closely with sous chefs and other team members to maintain a smooth workflow.
- Event Planning: Collaborate with the events team to create special menus for weddings, conferences, and holidays.
Customer Interaction
- Guest Engagement: Occasionally interact with guests, offering tastings or taking feedback on dishes.
- Feedback Collection: Gather feedback from guests and colleagues to continuously improve products and services.
Administrative Tasks
- Inventory Management: Track ingredients and supplies, and manage orders to ensure a steady supply.
- Documentation: Maintain detailed records of recipes, production schedules, and inventory.
- Compliance: Ensure all activities comply with health and safety regulations.
Evening Wrap-Up
- Cleaning and Maintenance: Clean and sanitize workstations and equipment. Ensure readiness for the next day.
- Review and Plan: Reflect on the day’s work, review feedback, and plan for upcoming tasks.

What We Need From You
- Education: Bachelor’s degree or equivalent in Culinary Arts or Hotel Administration.
- Experience: Five or more years in a similar role within an international luxury hotel or fine dining restaurant.
- Background: Strong exposure to American fine dining concepts and techniques.
- Language Skills: English fluency required; additional languages preferred.

This may involve taking on additional responsibilities as needed, especially during periods of high occupancy or in emergency situations.
