F&B Manager – Tenuta di Artimino (Member of Meliá Collection)

Job Summary
To manage properly all the activities related to the F&B department. As F&B Manager (m/f/d), you are a key member of the management team and assume overall culinary responsibility for our gastronomic outlets, from strategic planning to operational implementation. With a strong sense for quality, trends, and guest expectations, you and your team create an outstanding gastronomic experience.
Key Responsibilities
- Financial and performance management: Preparation of forecasts, budgets, and financial plans; responsibility for the F&B profit and loss.
- Organization and operational management: Staff planning, duty roster and vacation scheduling; planning, management and controlling of our outlets (Ristorante Biagio Pignatta, Ristorante Cantina del Redi, Pool Bar); management of banqueting and breakfast services.
- People management and development: Employee development and support of the F&B team; coordination of onboarding and supervision of employees, trainees and temporary staff.
- Communication and stakeholder management: Communication and coordination with suppliers, external partners and authorities; management of complaints and online feedback platforms.
- Marketing and strategic development: Promotion of upselling opportunities in the F&B area; menu development in collaboration with the Head Chef.
Qualifications
- Italian language and advanced English; a third language will be highly valuable.
- Knowledge of the kitchen area, hotel operations and the MICROS F&B management system.
- Ability to work in a team, service orientation, quality and professionalism, global and strategic vision and communication and influence as key competencies.
- Creativity and innovation; good knowledge of cost control and budget planning.
- Experience in menu and concept development as well as in implementing modern gastronomy and event concepts.
- Very good understanding of HACCP guidelines and quality management.
- Structured, results‑oriented and solution‑focused working style.
- High sense of responsibility for quality, profitability and guest loyalty; strong guest‑oriented mindset and approach.
