About the Role

Our award‑winning kitchen team has an exciting new opportunity for a Senior Chef de Partie to join us on a permanent full‑time basis in our pastry team. You will create exquisite dishes using locally sourced Scottish produce and be responsible for having your own section while gaining invaluable guidance and development within a multi‑outlet hotel kitchen.

In this role you will assist the Pastry Sous Chef in the preparation and service of food, ensuring that the highest standards are maintained at all times. Additionally, you will ensure that the kitchen areas designated, equipment and utensils are always kept clean and tidy to the Old Course Hotel standards.

Responsibilities
  • Manage and oversee food production as directed by the Senior Team and present it at the required times.
  • Assist the Pastry Sous Chef in planning, preparation and execution of new menus and ideas.
  • Ensure that the Chef de Parties, Commis Chefs, Demi Chefs work to standard, supervising, guiding and motivating them.
  • Maintain high levels of communication between the Senior Team and Chef de Parties, particularly ensuring special messages and requests are dealt with promptly.
  • Maintain the kitchen recipe manual and SOPs, managing production, quality and consistency through their use.
  • Assist the Pastry Sous Chef with ordering food purchases and stock control, ensuring stock levels align with business needs.
  • Assist the Pastry Sous Chef with hiring needs of the back of house staff in line with company policy.
  • Maintain discipline in a fair and consistent manner, including timekeeping.
  • Ensure the smooth running of the kitchen in the absence of the Sous Chef.
  • Have your own basic set of equipment, including knives, pallet knives, mini scales etc.
  • Understand the menus and operating procedures of the kitchen and run your section accordingly.
  • Ensure all HACCAP systems are followed, and daily due diligence is completed by you and the team.
  • Be fully conversant with your departmental LQA standards.
Requirements
  • Previous similar experience as either a Senior Chef de Partie or Chef de Partie.
  • Strong knowledge and skills in plated desserts, chocolate work and patisserie.
  • Creativity and passion for modern pastry trends and techniques.
  • Culinary education preferred but not essential.
  • Solid knowledge of culinary terminology and techniques.
  • SVQ 1 & 2, MVQ or equivalent qualification.
  • Strong staff training and development experience.
  • Knowledge of menu composition.
  • Extensive knowledge of food handling and sanitation standards.
Hours

Permanent, Full Time, 40 hours per week, 5 days out of 7.

Salary

£32,213.96 per annum
