Restaurant General Manager – Fitzrovia, London

We are a new and ambitious independent restaurant offering a relaxed à‑la‑carte lunch menu driven by seasonal British produce, and an intimate 20‑seat tasting‑menu destination at night. The kitchen is led by a chef with deep roots in Japanese‑inspired fine dining, blending precision, produce‑driven cooking, and a hint of theatre.

Key Responsibilities
  • Lead and manage the entire front‑of‑house (FOH) team: recruiting, training, coaching, rostering, and performance management.
  • Oversee service standards daily for lunch and evening tasting menu, ensuring consistency, excellence and that the restaurant’s voice and character shine through.
  • Collaborate closely with kitchen leadership to align front‑ and back‑of‑house pacing, timing, communication, and the guest journey.
  • Manage reservations, guest relations, and service flow for an intimate, high‑touch experience.
  • Handle supplier and stock relationships for FOH, including wines, beverages, and service items in harmony with kitchen sourcing.
  • Assist in shaping the growth plan as we move from our current 20‑seat model to something larger: input on expansion, service design, hiring, and systems.
  • Uphold the restaurant ethos: respect for seasonality, elevated craft, subtle hospitality, and understated but refined ambiance.
Qualifications & Experience
  • Significant experience in a high‑end independent restaurant, ideally in a tasting‑menu or fine‑dining environment.
  • Michelin‑starred or Michelin‑style experience is strongly preferred.
  • Understanding of "hospitality with soul" and ability to deliver polished, precise service without losing warmth or character.
  • Confidence leading a small, high‑calibre team while maintaining high standards from the first cover to the last.
  • Good grasp (or openness to learn) of Japanese‑influenced fine dining.
  • Entrepreneurial, proactive, and excited to grow with us as we expand.
  • Excellent communication, organization, and leadership skills.
