Job Description

The role requires clear and effective communication with front‑of‑house staff, the kitchen, and guests to create a seamless dining experience. Strong expertise in wine selection, pairing recommendations, and wine service is essential to enhance the overall guest experience and uphold the restaurant’s reputation for excellence. As the concept and offerings continue to evolve – including champagne, cocktails, and current or future food menus – the role demands excellent knowledge across all areas. The position may also involve fulfilling Floor Manager responsibilities across Wild Honey restaurant, St. James Bar, and the seasonal Terrace, requiring a high level of flexibility, leadership, and professionalism.

  • To adhere to reporting procedures and keep staff costs in line with budget. Financial awareness and understanding budgets are a must. You are accountable for the maximisation of revenue.
  • To attend daily update and weekly F&B management meetings to discuss and solve operational problems & to establish strategies for improvement & development.
  • To maintain stock levels and ensure that all relevant staff are made aware of unavailable items.
  • Prepare monthly stock control and ensure par stock levels are maintained.
  • Ensure that training of staff is carried out and followed through in an organised manner, records to be part of the Restaurant manager’s files. (training calendar with strong focus on sequences of service)
  • To ensure all daily reporting and logs are filled out accurately and in detail to allow for consistent communication and tracking of information within the Food & Beverage division.
  • Provide detailed and knowledgeable explanations of the wine list, offering personalised recommendations based on guests’ preferences and menu choices.
  • Guide guests through the wine selection process, helping them make informed decisions that enhance their dining experience.
  • Ensure the proper handling, storage, and rotation of wines to maintain optimal quality and freshness.
  • Perform wine service duties with precision and professionalism, including decanting, pouring, and presenting wines at the appropriate temperature and in suitable glassware.
  • Educate and engage guests about the wines they are enjoying, sharing insights into the winemaking process, vineyards, and regions.
  • Ensure guest satisfaction through high‑quality service and strong public relations. Maintain attentiveness and professionalism at all times, as you are a salesperson representing the restaurant.
  • Handle customer complaints and take necessary action to remedy situation with your Manager.
  • Ensure all guest checks are correctly posted at the end of each meal period, alongside Cashiering, Reception duties.
  • Establish excellent relationships with guests and maintain a strong presence on the shop floor.
  • Possess excellent knowledge of the services offered by the hotel and ensure that all customers are informed about them.
  • Analyse customer feedback and implement corrective actions in agreement with hotel management.
Qualifications
  • Proven experience as a Floor Manager, or senior front‑of‑house role within a Michelin‑starred or high‑end fine dining restaurant.
  • Exceptional knowledge of fine dining service standards, etiquette, and guest experience expectations.
  • Strong leadership skills with the ability to train, motivate, and manage a diverse front‑of‑house team.
  • Advanced wine knowledge, including wine service, pairing principles, and premium beverage offerings.
  • Excellent communication and interpersonal skills, with a confident and professional approach to guest interaction.
  • Ability to perform under pressure while maintaining attention to detail and service consistency.
  • Strong organisational and problem‑solving skills, with the flexibility to adapt to changing service demands.
