Hyatt Regency London Blackfriars is located directly outside Blackfriars station, a few minutes away from Bank and is a short stroll from St. Paul’s Cathedral, the Tate Modern and South Bank. The Grade II-listed five-star hotel is steeped in regal history, residing on the former grounds of King Henry VIII's Bridewell Palace. The hotel offers 205 stylish guest rooms and suites, 4 meeting spaces, a restaurant and a signature bar.
Reporting directly to the General Manager, the Executive Sous Chef plays a pivotal role as Head of Department, overseeing the full culinary operation at Hyatt Regency London Blackfriars, including NYnLON Bistro, Leaf & Cane, City Lounge, Banqueting, Room Service, and Stewarding.
You are an inspirational leader who is driven by developing talent, elevating team capability, and fostering a culture of culinary excellence through coaching, knowledge sharing, and continuous training. With a creative approach to flavour and presentation, you bring innovative ideas to menu development while ensuring alignment with brand identity and guest expectations.
You will drive consistency, efficiency, and quality across all kitchen areas, ensuring compliance with Hyatt standards and industry best practices.
Lead daily kitchen operations across all outlets
Provide strategic culinary insights and support operational decision-making across the hotel’s culinary landscape
Oversee food quality, consistency, portion control, and presentation
Collaborate closely with F&B leadership to design menus, promotions, and seasonal offerings that enhance revenue while reflecting market trends and guest preferences
Drive cost efficiency by managing food cost targets, inventory control, waste reduction strategies, and supplier relationships.
Ensure rigorous compliance with food safety, HACCP, hygiene, and health & safety regulations, maintaining exemplary audit results
Coach, mentor, and develop the culinary team and drive a positive team culture
You are an experienced senior culinary leader with a background in luxury hotels or high-volume, multi-outlet operations. Confident in both creative menu development and day-to-day kitchen leadership, you bring strong organisational skills, a collaborative approach, and a passion for delivering exceptional dining experiences. You lead by example, inspire your team, and consistently uphold the highest standards of quality and presentation.
