About the job
Based at Mandarin Oriental Punta Negra, Mallorca, as Pastry Chef you will be responsible for overseeing all day‑to‑day operations of the pastry and bakery section, including the preparation of cakes, cookies, pies and bread, following both traditional and modern recipes.
Key duties
- Develop and innovate new desserts to enhance the hotel’s menu and engage guests.
- Decorate pastries with various icings and techniques to ensure visually appealing presentations.
- Manage inventory: monitor stock levels and order ingredients and supplies for the pastry section.
- Ensure full compliance with health, hygiene and safety regulations within the pastry area.
- Collaborate closely with the Executive Chef and other kitchen staff to maintain product quality and consistency.
- Train and mentor pastry team members, fostering skill development and high performance.
- Maintain kitchen equipment and workstations to ensure efficiency and cleanliness.
- Contribute to menu planning and seasonal offerings, bringing creativity and innovation to the culinary experience.
Experience and education
- Culinary school or university degree in a related field.
- Minimum of 2–3 years of experience in the luxury hospitality industry.
Technical skills
- Baking Techniques: Mastery of fundamental baking methods.
- Flavor Development: Creating innovative and balanced flavor combinations.
- Patisserie Expertise: Skilled in preparing a variety of pastries, desserts, breads and baked goods.
- Chocolate & Sugar Artistry: Crafting intricate designs with chocolate and sugar.
- Food Safety (HACCP): Ensuring a clean, sanitary workspace and compliance with food safety standards.
- Menu Development: Collaborating with chefs to design and update menus.
- Dessert Plating: Presenting desserts in a visually appealing and elegant manner.
