Product Developer in Leading Bakery Food Manufacturer

Our client, a leading bakery manufacturer in Etobicoke/Vaughan, is looking for a passionate and skilled Product Developer (Fillings, Icings & Whipped Cream) to lead the creation and optimization of innovative filling and decoration products for bakery, dessert and dairy applications.

Reporting to the VP Product Development and Regulatory Affairs, this role combines culinary creativity, food science expertise, and strong commercialization skills to deliver high‑quality, consumer‑preferred products from concept to launch.

Responsibilities
  • Product Development & Innovation
    • Develop new fillings, whipped toppings and cream‑based products aligned with consumer trends and customer needs.
    • Translate ideas into prototypes, ensuring desired taste, texture, stability and functionality.
    • Optimize recipes for scale‑up, cost, and manufacturing.
  • Technical & Process Expertise
    • Conduct bench‑top trials, pilot runs, and factory scale‑ups.
    • Work closely with cross‑functional teams to ensure successful product launches.
  • Quality & Compliance
    • Ensure all formulations meet food safety, labeling, and regulatory requirements.
    • Conduct shelf‑life, sensory, and performance testing.
  • Project Management
    • Manage multiple development projects from concept to commercialization.
    • Collaborate with suppliers on new ingredients and technologies development.
Requirements
  • Bachelor’s degree in Food Science, Food Engineering, Dairy Science, or related field.
  • 3‑7 years’ experience in product development, preferably in dairy, bakery, or dessert category.
  • Strong knowledge of emulsions, aeration, stabilizers, hydrocolloids, and dairy/plant‑based cream systems.
  • Experience with manufacturing scale‑up.
  • Solid understanding of food safety.
  • Strong sensory evaluation and analytical skills.
  • Passion for innovation and consumer‑centric product design.
  • Experience in whipped cream, icings, or bakery fillings (preferred).
