Job description

Pastry Chef

The Pastry Chef is responsible for preparing pastries, chocolates, and specialty desserts, ensuring proper standards and operations of the Pastry kitchen for the hotel. Dedicated, passionate, and creative, the Pastry Chef constantly explores and applies modern, contemporary techniques and trends, pushing the limits of the pastry team to provide unique and impressive offerings to guests.

Primary Responsibilities:

  • Produce all desserts and components for pastries and desserts across all food & beverage outlets, including banquets, restaurants, room service, and special event requests.
  • Create new desserts and pastries according to company requirements, new menu developments, or themes, and develop standardized recipes and costing procedures.
  • Control food costs, minimize waste, and track inventory.
  • Ensure all hotel and culinary standards set by the Executive Chef regarding food preparation, service, and handling are met or exceeded.
  • Lead by example through hands-on training and development of Pastry Cooks within the department.
  • Prepare work schedules and plans based on business needs.
  • Receive, store, and prepare pastry food items; maintain cleanliness of equipment, countertops, shelves, and utensils; report deficiencies and strive for continuous improvement.
  • Assist management in overseeing daily operations beyond the Pastry kitchen as needed.
  • Perform other duties as required.

Desired Qualifications:

  • Minimum of 3 years of experience in large-scale production, a la carte, and high-quality food service with a focus on pastry/baking arts.
  • Culinary diploma in pastry arts is an asset.
  • Canadian Red Seal Journeyman Certification and Food Safe certification are assets.
  • Strong leadership skills and a positive attitude, with previous supervisory experience of at least 3 years in the culinary field.
  • Excellent knowledge of baking, pastry, sugar confectionery, chocolate work, and food preparation, including awareness of current trends.
  • Excellent interpersonal and supervisory skills, capable of working in a fast-paced environment and responding effectively under pressure.
  • Ability to work well both independently and as part of a team.

Terms of Employment:

  • This is a full-time position requiring flexible availability, including days, evenings, weekends, and holidays.
  • Must pass a basic security clearance.
