Job Overview
Lead a team to achieve financial goals: budget, forecast, control food and labour costs. Proactively drive outlet food and beverage targets and position the restaurant as a top culinary destination for culinarians within Alberta. Analyze monthly P&L and month‑end reporting, identify deviations from the business plan, and participate in management meetings to review opportunities and achievements.
Responsibilities
- Prepare weekly staff schedules while considering anticipated business, operating budgets and service standards.
- Lead the culinary team during banquets, restaurant service, off‑site events and group event management.
- Execute a progressive and inspired product that differentiates the restaurant from competitors.
- Work with the Executive Chef to develop new menus and products supported by analysis and accurate costings.
- Ensure a high level of food safety management and precautions with regard to Alberta food safety and hygiene standards; Certified Advanced Food Safety Training is an asset.
- Maintain accurate departmental reports, schedules, standard recipes, menus, food presentation, and correspondence in an accurate and timely manner.
- Adhere to and train all culinary employees on safety, sanitation, recipes, policies and procedures.
- Collaborate with sales, marketing, lodging and group services in executing events.
- Implement seasonal menu launches, food presentation, recipes, and food costing in conjunction with the Executive Chef of Jasper Lodging.
- Foster a positive, diverse, and inclusive work environment and create a culture of empowerment, teamwork and continuous improvement.
- Motivate, supervise and discipline team members in accordance with Pursuit’s policies.
- Recruit, onboard and retain a high‑functioning team in collaboration with human resources, and conduct performance reviews and succession planning.
- Maintain accurate par levels for ordering using approved vendors and ensure proper rotation of all foods.
- Continuously evaluate food program processes and proactively take action to improve efficiency and quality.
- Develop, conduct and maintain staff training programs focused on development needs.
Qualifications
- English fluency – advanced level required.
- Diploma from a reputable Hospitality Management or Culinary school (preferred).
- Additional certifications in Food & Beverage and Certified Advanced Food Safety Training are considered assets.
- Excellent reading, writing and oral proficiency in English.
- Proficient knowledge of MS Excel, Word and PowerPoint.
- Red Seal Certification or equivalent required.
