Job Summary

The Pastry Chef at The Meydan Hotel is responsible for creating, preparing, and presenting high-quality pastries and desserts while upholding the hotel's standards. Working with the Executive Sous Chef and Chef De Cuisine, the Pastry Chef develops innovative menus, manages pastry staff and inventory, and ensures strict adherence to hygiene and safety protocols. Additional duties include training team members, overseeing daily and event-based production, and responding promptly to guest requests.

Key Duties and Responsibilities
  • Stay up to date with pastry and baking industry trends.
  • Bake fresh pastries, desserts, and breads for all hotel outlets.
  • Lead, manage, and motivate the pastry team; foster good relations with culinary staff and other departments.
  • Recommend improvements for production, service, equipment performance, and workflow to enhance efficiency and safety.
  • Communicate variances and important updates to relevant kitchen staff and ensure smooth shift transitions.
  • Maintain, monitor, and arrange repairs for kitchen equipment; ensure safe handling of all tools.
  • Assist the Executive Chef with budgeting and offer input for the Bakery Department.
  • Enforce health, safety, and sanitation rules and standards as per regulations.
  • Conduct daily briefings with section heads to distribute key information.
  • Identify market needs and food trends for both hotel guests and the local market.
Skills, Experience & Educational Requirements
  • Degree in Pastry, Bakery or Hotel Management or its equivalent.
  • At least 3 years’ experience in similar role within a 5* hotel.
  • HACCP certified.
  • Intermediate computer competency including Excel.
