Job Requirements
  • To be fully aware of all menu items, their recipes, methods of production, and presentation standards.
  • Carry out close liaison with all sections of the kitchen to ensure smooth and efficient service.
  • Assume duties of chef de partie in his/her absence.
  • Demonstrate initiative at all times.
  • Lead and support junior members of the team.
  • Strong desire to improve skills and knowledge.
  • Ability to produce work in accordance with deadlines.
  • Seek solutions to minor obstacles that occur from time to time.
  • Project a pleasant and positive professional image at all times.
  • Collect and report daily data on issues as they arise.
  • Review daily production sheets with the chef de partie or sous chef when the former is not present.
  • Prepare and delegate the production of necessary food items in accordance with standards, timely and efficiently, to ensure no interruption to guest service.
  • Actively participate in training junior culinary staff and apprentices.
  • Adhere to standardized recipes and specifications to maintain consistency and meet standards.
  • Keep work station clean and organized, including fridges, freezers, countertops, and stove tops.
  • Ensure station opening and closing procedures are carried out to standard.
  • Minimize overproduction and food waste; ensure proper rotation, labeling, and storage of food to reduce food costs.
  • Operate all kitchen equipment safely at all times.
  • Handle, store, prepare, and serve food safely according to hotel and government food safety guidelines.
  • Report deficiencies in kitchen equipment and food quality promptly to the chef de partie or sous chef.
  • Run the section confidently with a strong sense of urgency.
Specific Job Knowledge, Skills, and Abilities

Proficiency in writing and speaking English.

Education

Postgraduate and basic apprenticeship.

Experience

Minimum of 1-2 years in a similar position within a high-volume, internationally recognized luxury hotel or food and beverage establishment.
