Responsibilities
  • Prepare and portion a variety of meats including beef pork poultry and game according to the restaurants specifications and high standards.
  • Collaborate with the executive chef and culinary team to develop meat-based dishes and contribute to the overall menu strategy.
  • Oversee the daily butchery operations ensuring efficient workflows and maintaining high standards of cleanliness and safety.
  • Manage inventory levels of meats and supplies placing orders as necessary while monitoring quality and freshness.
  • Stay updated on industry trends and innovation in butchery practices ensuring adherence to best practices.
  • Train and mentor junior kitchen staff in proper butchering techniques and meat preparation.
  • Uphold the highest levels of food safety and hygiene standards within the butchery area.
Requirements
  • Minimum of 3 years of experience as a Chef De Partie or similar role specializing in butchery.
  • Culinary school diploma or relevant qualifications in butchery and meat preparation.
