Job summary

A local fine-dining sushi restaurant in Singapore is seeking an experienced sushi chef. Key responsibilities include preparing Omakase menus, expertly crafting various sushi types, and inspecting ingredient quality. The ideal candidate should have experience in preparing fine-dining sushi and knowledge of food safety standards. This role requires maintaining a clean workspace and ensuring that food allergies and special requests are accommodated.

Qualifications

  • Experience in preparing Omakase Menu and various types of sushi dishes.
  • Ability to expertly cut and fillet different types of fish.
  • Knowledge of food safety and hygiene regulations.

  • Prepare Omakase Menu and fine-dining quality sushi.
  • Inspect quality of ingredients and communicate with Executive Chef.
  • Maintain cleanliness to prevent food contamination.
Job description
  • Able to prepare Omakase Menu.
  • Expertly cutting, slicing, and filleting different types of fish.
  • Create a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi including exquisite ingredients)
  • Prepare all types of sushi, including maki, nigiri and sashimi of fine-dining quality
  • Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard.
  • Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety.
  • Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine
  • Maintaining a clean work environment in order to prevent food contamination.
  • Regularly taking inventory of food supplies and other products.
  • Communicating with wait staff to ensure that special requests and food allergy considerations are met.
  • Any other ad-hoc duties assigned
