Job Responsibilities:
Menu Development & Bakery Innovation
- Lead production of all baked goods including artisan breads, and café-style pastries.
- Design and execute seasonal pastry menus in alignment with franchise guidelines.
- Ensure consistency in flavour, texture and presentation.
- Work closely with the Head Chef & Operations Manager to ensure bakery items complement the café menu and support cohesive guest experience.
- Continuously improve recipes, techniques, and production processes for efficiency and quality.
- Adhere to existing franchise recipes and list of ingredients.
Bakery Operations & Quality Control
- Oversee all baking processes from mixing to proofing and baking.
- Monitor food costs, inventory, and waste to ensure efficiency and profitability.
- Conduct daily checks to ensure the freshness and quality of all bakery products.
- Schedule production to match business needs.
Financial & Inventory Management
- Manage food cost and labour budget, ensuring profitability.
- Work closely with management to establish pricing strategies and cost controls.
- Establish relationships with food suppliers and vendors to ensure the best quality and pricing.
- Oversee ordering and inventory management to ensure adequate stock without over-ordering.
- Ensure freshness and consistency of ingredients.
Customer Engagement & Experience
- Ensure all bakery products contribute to a premium customer experience.
- Maintain visual appeal and portion consistency in all bakery items.
- Interact with customers spontaneously to showcase bakery offerings and promote the brand culture.
- Interact with customers when necessary to address complaints or compliments and adjust processes or products when needed.
Leadership and Team Management
- Recruit, train, and mentor a high-performing bakery team.
- Develop a positive, team-oriented work culture.
- Perform performance evaluations, manage scheduling, and ensure efficient staffing.
Collaboration & Additional Responsibilities
- Work closely with the operations and management teams to ensure alignment of bakery output with business goals.
- Participate in planning and execution for new product launches, marketing campaigns.
- Perform any other additional responsibilities as assigned.
Job Requirement
- Minimum 5 years of experience in bakery or pastry productions, with at least 3 years in a leadership role.
- Strong knowledge of artisanal baking techniques and café-style pastries.
- Ability to manage baking schedules and lead a production team.
- Experience in high-volume café or bakery operations is a plus.
- Excellent time management, problem-solving, and organizational skills.
- Ability to train, motivate, and lead a dynamic team in a fast-paced environment.
- Meticulous attention to quality, consistency, and presentation of all dishes.
- Strong verbal and written communication skills.
- Ability to work flexible hours/shift, including weekends and public holidays.
