As Assistant Chief Steward, you will be responsible for the following duties:

Responsibilities
  • Manage all aspects of hygiene and cleanliness of all kitchens and stewarding areas
  • Maintain the operating equipment of the Hotel in compliance with FLHSS&E standards
  • Attend the regularly scheduled outlet Walk Throughs and manage the needed follow ups
  • Conduct daily inspections of all kitchens and stewarding areas
  • Coordinate the ice machine cleaning standards together with engineering
  • Support the Stewarding Manager with labour and chemical cost of the Stewarding department
  • Support the Stewarding Manager with monitoring and manage breakages and losses to the Hotel’s operating equipment
  • Ensure all functions and events are fully prepared according to the requirements stated in the Banquet Event Order
  • Manage the manpower allocation of a team of stewarding workers to be distributed to the various outlets in combination with the outsourced company
  • Conduct training for MOSIN and contracted colleagues
  • Oversee special projects as and when assigned by the Stewarding Manager
