Job description

As a Sushi Chef de Partie, you will be responsible for running your section with confidence, maintaining the highest standards of food quality, hygiene, and execution. You will work closely with senior chefs to ensure the sushi offering at Shanghai-Me is delivered flawlessly every service.

Responsibilities
  • Preparing and presenting sushi dishes to a consistently high standard
  • Running your section efficiently as a Sushi Chef de Partie during busy services
  • Maintaining excellent knife skills and attention to detail
  • Ensuring full compliance with food safety and hygiene standards
  • Supporting junior chefs and contributing to a positive kitchen culture
  • Working collaboratively with the wider brigade to uphold the Shanghai-Me brand
Qualifications & Experience
  • Proven experience as a Sushi Chef de Partie or strong Sushi Chef ready to step up
  • Solid knowledge of sushi preparation, rice, fish handling, and presentation
  • Experience in high-volume or premium restaurant environments
  • Strong work ethic, reliability, and team-focused attitude
  • Passion for Japanese cuisine and continuous improvement
