About Mei Ume

Mei Ume offers traditional Chinese and Japanese dishes with a modern approach. Showcasing two of the greatest Asian cuisines under one roof, the restaurant presents a colourful selection of sushi, sashimi and Chinese main course dishes.

What you will do
  • Take ownership of the sushi section, ensuring every dish meets the highest standards of quality and presentation
  • Prepare and present sushi and sashimi with precision and artistry
  • Oversee mise en place and service for your section, supporting the team during busy service periods
  • Collaborate with the culinary team to develop seasonal sushi offerings and innovative menu items
  • Maintain impeccable hygiene, safety, and food quality standards in line with Four Seasons policies
  • Mentor and support junior team members, fostering a culture of excellence
What you bring
  • Formal culinary training or equivalent hands-on experience
  • Proven expertise in sushi preparation, knife skills, and handling premium ingredients
  • Previous experience in a similar role within a high-end or luxury environment
  • Knowledge of Chinese cuisine and other Asian specialities is an advantage
  • Strong organisational skills and the ability to thrive in a fast-paced kitchen
  • A collaborative spirit and passion for delivering exceptional guest experiences
  • Good command of English
