• Lead the brigade – Support the Executive Head Chef in managing day‑to‑day kitchen operations, including briefings, prep schedules, and team organisation.
• Drive service – Take the lead on the pass, maintain momentum, and deliver consistently outstanding dishes every time.
• Develop the team – Train and support junior chefs, create a culture of learning and excellence, and nurture a positive team spirit on every shift.
• Control stock & costs – Support purchasing, stock rotation, portion control, and waste reduction to hit budget and sustainability goals.

• Proven experience as a Sous Chef or Junior Sous in a high‑quality, fast‑paced kitchen
• Strong technical skills across all sections

• Excellent knowledge of food hygiene, HACCP, COSHH and allergen procedures
• Commercial awareness, understanding how to manage food costs and drive efficiency
