Coming to Borough in March 2026, Oudh 1722 is a project rooted in the soul of Awadhi cuisine and the art of genuine hospitality. We are transforming a three-story Victorian building into a dining sanctuary where the food defined by the slow-cooked, aromatic traditions of Lucknow is only half the story.

The Senior Sous Chef supports the Head Chef in delivering consistent, high-quality food and smooth day-to-day kitchen operations. This is a hands-on leadership role focused on service execution, team development, and maintaining authentic Lucknowi cooking standards.
Support the Head Chef in delivering consistentlyhigh standards across all services
Lead kitchen operations confidentlyduring service and in the Head Chef’s absence
Build, train, and retain a strong BOH team
Ensure authentic executionof Lucknowi dishes
Oversee mise en place, prep planning, and service flow
Monitor food costs, portion control, and waste
Assist with ordering, stock control, and supplier checks
Maintain full compliancewith food safety and hygiene standards
Support menu developmentand dish refinement
Lead by example in professionalismand kitchen culture
Experience as a Senior Sous Chef or strong Sous Chef
Strong knowledge of Indian cuisine, ideally Lucknow / Awadhi
Confident leadership and team development skills
Excellent organisation and attention to detail
Strong understanding of food cost and stock control
Calm and solutions-focused under pressure
Passion for quality food and consistency
Competitive salary per annum (DOE) including service charge
