A restaurant management technology firm is seeking a founding Senior AI Product Engineer to design and optimize backend systems using AI capabilities. This role focuses on building multi-step workflows and integrating AI into core operations for restaurant clients. Candidates should have strong engineering fundamentals and hands-on experience in production agentic systems. The position offers competitive salary, meaningful equity, and numerous benefits including comprehensive health insurance and generous leave.
Let’s fix hospitality, for good.
Hospitality is tough – margins are thin, waste is high, and teams are stretched. But it doesn’t have to be this hard. That’s why we built Nory.
Our CEO, Conor, knows the pain first-hand. After founding and scaling Mad Egg in Ireland, he got fed up with juggling “market-leading” systems, clunky spreadsheets, and endless printouts. So he set out to build the tool he wished he’d had from day one.
Nory is an all-knowing restaurant management system. It blends real-time data with AI predictive analytics, giving operators control of their margins. From food prep to forecasting, it’s operational intelligence that helps restaurants run with consistency, certainty, and profit. The result? Thriving restaurants, better jobs, less waste, healthier margins.
And we’re just getting started. Fresh off a Series B led by Kinnevik, we’ve grown to 70+ people across Ireland, the UK, and Spain – and demand is scaling faster than we ever imagined.
We are now hiring our first/founding Senior AI Product Engineer – first and foremost a software engineer who can architect, build, and operate production‑grade agentic systems. This is not a research role and not a “chatbot features” role. You will be building core backend systems that deliver real-time intelligence to thousands of operators.
If you are a senior engineer who has built LLM‑powered, multi‑step agentic workflows and shipped them to production, you will thrive here.
As our founding Senior AI Product Engineer, you will design and own backend systems that use LLMs and agentic workflows to deliver mission‑critical insights to our customers.
This role sits inside Engineering, works daily with product and data teams, and is responsible for production reliability, scale, and continuous iteration.
Here’s what you will be responsible for:
Design, build, and run multi‑step agentic workflows – orchestration of tools, APIs, and business logic to create reliable and autonomous AI systems.
Adapt and deploy pre‑trained models using prompt engineering, retrieval (RAG), evaluation frameworks, and fine‑tuning where needed.
Integrate AI capabilities directly into core Nory workflows, collaborating with product, design, and data teams to deliver measurable value.
Solve real operational problems with AI – improving forecasting, automating insights, and reducing friction for restaurant teams.
Monitor, test, and iterate on live systems, improving reliability, accuracy, and user experience based on behavioural data and real‑world feedback.
Establish best practices for agent design, helping shape how Nory builds and scales AI systems across the business.
This is first and foremost a software engineering role, ideal for someone who has built production‑grade, multi‑step agentic systems – not simple LLM features or prototypes.
Strong engineering fundamentals – You write clean, maintainable code, understand systems architecture, and can take features from prototype to production. We use Python, but language is secondary to your engineering ability.
Deep, hands‑on experience building and operating production LLM or agentic systems – You’ve designed multi‑step workflows, orchestrated tools/APIs, handled retries and failures, and run real agent systems end‑to‑end. This is the core requirement for the role.
Practical AI/ML knowledge – You’ve worked with embeddings, retrieval, evaluation strategies, and model behaviour in real products.
A product‑first mindset – You think in terms of user problems, outcomes, and impact, not research metrics.
Ability to work autonomously in ambiguity – You thrive in fast‑moving environments, make pragmatic decisions, and ship quickly. You are a 0→1 builder who owns problems end‑to‑end.
Strong commercial awareness – You understand how to apply AI to deliver meaningful value, efficiency, and ROI for customers.
Experience working with real‑world data pipelines or backend systems.
If you’re excited by what we’re building, we’d love to hear from you – even if you don’t tick every box.
