The Peninsula London is excited to announce that we are seeking a Head Sommelier to work within Canton Blue Restaurant, designing and delivering a unique and market leading wine programme alongside the Director of Wine. This position will have a great passion for both wines and service and be able to translate this into a special guest experience.

On the ground floor, Canton Blue, the hotel’s innovative Chinese restaurant, will celebrate the spice-trade union of Asian and British cultures with menus of creative dishes, along with cocktails, and artisanal teas.

Key Accountabilities

  • Always ensure the delivery of exceptional wine service, providing friendly, yet discreet and unobtrusive service in greeting and waiting on all guests. Exceeds guest expectations with service, in keeping with the Peninsula Service Principles, focusing on the core principles.
  • Establish and maintain positive guest and colleague interactions with productive working relationships.
  • Work closely with other departments and stakeholders such as Procurement, cellar stores and other outlets.
  • Handle all guest and internal customer inquiries that needs the attention of the Food and Beverage Office in a courteous and efficient manner, following through to make sure problems are resolved promptly.

General requirements

  • Thorough knowledge of wine and food pairing.
  • Experience of 4 year or more working in a similar role in a luxury environment.
  • Wine-related studies.
  • Friendly and positive with a flexible approach and confidence to guide a team and converse with guests.
  • Ability to work under pressure.
