Overview
The main responsibility is to supervise the Chinese production kitchen and support the Executive Chefs in our unit. You will have a good knowledge of specific ingredients cooking methods and act as a team leader to motivate the team. You will be responsible for overseeing training evaluating and counselling the team ensuring compliance with company standards.
Responsibilities
- Working closely with the Executive Chef team to ensure that consistent quality products in the Chinese kitchen are produced following all DO & CO requirements.
- Day to day managing and supporting of the Chinese Kitchen team.
- To maintain high quality standards in staff performance Chinese food production and presentation service procedures.
- To Ensure all kitchen appliances are kept clean and are well maintained and report any issues to the Head Chef.
- Planning production to the daily schedule and ensuring the exceptional quality is maintained at its highest level with maximum efficiency in accordance with DO & CO regulations as set by the Quality Assurance team.
- Ensuring operations adhere to all SOPs and ALL relevant Critical Control Points Health and Safety Food safety and all legal requirements.
- Constantly performing quality control checks to ensure specifications are met on raw materials and finished products.
- Ensure the correct cleaning and sanitising chemicals are used in compliance with EHO standards in the kitchen and take corrective action as required.
Qualifications
- Passion for Authentic Chinese Cuisine : A genuine enthusiasm for cooking traditional Chinese dishes with a focus on flavor and authenticity.
- Extensive Knowledge of Chinese Culinary Techniques : Proficient in various cooking methods including stir-frying steaming and braising as well as an understanding of regional variations within Chinese cuisine.
- Commitment to Quality Ingredients : Strong passion for using fresh high-quality ingredients to enhance flavor and presentation.
- Ability to Thrive in Fast-Paced Environments : Proven capability to work efficiently under pressure while managing multiple orders and prioritizing tasks effectively.
- Attention to Detail : Exceptional focus on maintaining consistency in food presentation and quality ensuring that each dish meets high culinary standards.
- Expert Knife Skills : Proficient in various cutting techniques and safe handling of raw fish and other ingredients.
- Food Safety and Sanitation Knowledge : In-depth understanding of food safety regulations and best practices to ensure a safe and clean kitchen environment.
- Strong Communication and Teamwork Abilities : Effective communicator with the ability to collaborate seamlessly with kitchen staff and front-of-house team to deliver exceptional dining experiences.
