Job Description

The Assistant Head Baker is a hands‑on leader within the bread team, helping to maintain a calm, organized, and consistent production environment. In partnership with the Head Baker, this role supports daily operations, mentors team members, and contributes to the ongoing development of systems and standards. The Assistant Head Baker leads by example, balancing craft, communication, and care to support both the product and the people behind it.

Responsibilities
  • Support daily bread production while upholding high standards of quality, consistency, and organization
  • Work closely with the Head Baker to plan and execute production efficiently
  • Lead by example on the production floor, maintaining strong fundamentals and attention to detail
  • Guide, train, and support team members to ensure consistent techniques and results
  • Step in to oversee production and team coordination as needed
  • Monitor workflow, timing, and output to meet daily production demands
  • Communicate clearly with the team to address needs, challenges, and improvements
  • Contribute ideas to improve systems, processes, and overall efficiency
  • Maintain a clean, safe, and well‑organized work environment
  • Support a positive, respectful, and collaborative team culture
Qualifications
  • Solid experience in artisan bread production within a professional kitchen or bakery environment
  • Strong understanding of fermentation, dough handling, and baking fundamentals
  • Previous experience in a senior baker, lead baker, or informal leadership role
  • Ability to work confidently in a fast paced, production driven setting
  • Organized, dependable, and comfortable managing multiple priorities
  • Clear and respectful communicator who leads with calm and consistency
  • Interest in mentoring and supporting the development of other team members
  • Comfortable working early mornings, evenings, or overnight shifts as required
  • Physically able to perform hands on production work in a bakery environment
