Job description
JOB PURPOSE

The role holder is responsible for overseeing daily production operations of the bakery division to ensure products are manufactured safely, efficiently, and in full compliance with quality standards, sanitation requirements, and production schedules.

Accountabilities & Responsibilities
  • Oversee daily bakery production activities, including mixing, proofing, baking, cooling, slicing, and packaging.
  • Monitor production lines to ensure efficiency, throughput, and adherence to the master production schedule.
  • Adjust staffing levels, workflow, and machine settings to meet output targets and minimize downtime.
  • Coordinate with maintenance, sanitation, and quality teams to ensure seamless operations.
  • Prepare task performance sheets and daily production reports accurately and on time to keep management informed of operational performance, opportunities, and challenges.
  • Ensure all products meet company quality specifications, customer requirements, and applicable regulatory standards.
  • Enforce GMPs, HACCP guidelines, and all food safety protocols.
  • Supervise, train, and coach production staff across multiple lines to maintain high performance and compliance.
  • Conduct safety audits, incident investigations, and implement corrective action plans.
  • Track and analyze production KPIs, including yield, labor efficiency, downtime, and wastage.
