Job Summary
We are looking for a skilled and energetic Baker – Live Station & Pastry Assistant to manage our live bakery station and support the Head Chef in daily pastry and bread production. The role requires hands‑on baking skills, customer‑facing confidence at the live station, and strict adherence to food safety and hygiene standards.
Key Responsibilities
Live Station Operations
- Operate and manage the live baking station (tandoor / bread oven / flatbread station).
- Prepare, bake, and present fresh breads (tandoori bread, manakeesh, buns, flatbreads) in real time.
- Ensure consistent product quality, taste, and presentation during live service.
- Interact professionally with customers when required, explaining products and baking process.
Bakery & Pastry Support
- Assist the Head Chef and Pastry Chef in:
- Dough preparation and fermentation
- Pastry and bun production
- Baking, finishing, and portioning
- Follow standardized recipes, yields, and portion control.
- Support daily prep, baking schedules, and production planning.
Food Safety & Hygiene
- Comply with Dubai Municipality food safety regulations at all times.
- Maintain cleanliness of live station, work surfaces, tools, and equipment.
- Record and monitor:
- Temperature logs (chillers/freezers)
- Cleaning and sanitization schedules
- Follow FIFO, proper storage, and labeling procedures.
Stock & Kitchen Support
- Assist with basic stock checks for flour, fillings, and baking ingredients.
- Minimize waste and report any quality or equipment issues immediately.
- Support kitchen team during peak hours and special events.
Requirements & Qualifications
- Proven experience as a Baker or Bakery Assistant (live station experience is a strong advantage).
- Basic knowledge of pastry, bread dough, and baking techniques.
- Ability to work in a fast‑paced, open kitchen / live station environment.
- Understanding of food safety and hygiene standards.
- Team player with a positive attitude and willingness to learn.
- Physically fit and able to stand for long hours.
Preferred (Not Mandatory)
- Experience with tandoor ovens, flatbreads, or artisan bread.
- Previous work in cafés, bakeries, or open‑kitchen concepts.
- Food Safety certification.
Working Conditions
- Long‑based work, including weekends and holidays.
- Hot kitchen / live station environment.
- Direct coordination with Head Chef and kitchen team.
