Qualifications

• Experience as a Sushi Chef or Sushi Cook in a fast-paced restaurant.
• Expertise in sushi preparation, knife skills, and traditional Japanese techniques.
• Ability to multi-task and stay detail-focused during busy shifts.

Responsibilities

• Prepare sushi, sashimi, and maki according to high standards.
• Maintain fish quality, cutting techniques, and presentation.
• Follow HACCP and sanitation guidelines for raw fish handling.
• Manage mise en place, rice, and sauce preparation.
• Keep a clean, efficient sushi station during service.
• Assist with inventory and collaborate with BOH/FOH teams.
• Engage guests with sushi recommendations when appropriate.
