Responsibilities

• Prepare sushi, sashimi, and maki to Benihana’s standards.
• Maintain knife skills, fish quality, and precise cuts.
• Follow HACCP guidelines for raw fish handling and sanitation.
• Mise en place: ingredients, rice, and sauces for service.
• Keep station clean and efficient during peak hours.
• Monitor seafood inventory and freshness to ensure quality.
• Collaborate with BOH and FOH for a seamless dining experience.
• Engage with guests with sushi recommendations when appropriate.
• Assist chefs and leadership with assigned tasks.
