Qualifications

• Prior experience as a Sushi Chef or Sushi Cook in a high-volume restaurant.
• Expertise in sushi preparation, knife skills, and traditional Japanese techniques.
• Understanding of sushi-grade fish handling, storage, and safety practices.
• Willingness to learn and contribute to menu innovation.

Responsibilities

• Prepare and execute all sushi, sashimi, and maki rolls to Benihana’s high standards.
• Maintain knowledge of fish quality, cutting techniques, and sushi prep.
• Ensure consistent knife cuts, portioning, and plating for all dishes.
• Follow food safety, sanitation, and HACCP guidelines for handling raw fish.
• Manage mise en place, rice cooking, and sauce production.
• Keep a clean, organized sushi station for high-volume service.
• Monitor seafood and produce inventory to ensure freshness.
• Collaborate with BOH and FOH teams for seamless dining.
• Engage with guests and offer sushi recommendations.
• Execute tasks with professionalism and enthusiasm as directed by Chefs.
