  • Work closely with the Executive Head Chef to develop, evolve, and execute seasonal menus aligned with LUNA's philosophy.
  • Prepare and present dishes with exceptional technique, balance, and attention to detail in an open-kitchen setting.
  • Demonstrate mastery of traditional and modern Japanese culinary techniques while embracing innovation and creativity.
  • Handle the finest seasonal and premium ingredients with respect, ensuring minimal waste and maximum flavour.
  • Engage with guests throughout the dining experience, sharing knowledge, inspiration, and storytelling behind each course.
  • Maintain impeccable mise en place, cleanliness, and organisation at all times.
  • Uphold the highest standards of food hygiene, health, and safety, ensuring excellence across every service.
