Cost Controller Job Description
The Cost Controller is responsible for controlling and reconciling all item costs by analyzing invoices, requisitions, products received, menus, and production. All work must adhere to company accounting and financial controls under the supervision of the Financial Controller, following policies outlined by the CEO and in line with company and corporate policies.
Duties & Responsibilities :
- Control and monitor project expenditures by verifying invoices and claims from suppliers, vendors, and subcontractors.
- Support project planning and cost control, including variation reporting and milestone monitoring.
- Coordinate with the project management team to resolve issues and ensure project completion.
- Report on project costs monthly to ensure expenditures stay within budget.
- Verify quantities ordered and received against purchase orders.
- Spot check invoice unit costs against market quotations.
- Ensure proper accounting of requisitioned items.
- Review food and beverage requisitions for pricing and accuracy.
- Maintain daily cost percentages for food & beverage and general items, and prepare reports.
- Work with the Executive Chef to track high-cost items.
- Reconcile deviations between requisitioned and inventory costs monthly.
- Update menu costs quarterly across outlets.
- Observe inventory procedures and supervise physical inventories.
- Perform closing duties related to food and beverage accounting.
- Price and extend monthly inventories.
- Record miscellaneous food cost deductions and credits accurately.
- Prepare preliminary food and beverage cost reports.
- Develop menu abstracts and potential cost analyses.
- Assist in menu pricing and cost breakdowns.
- Ensure proper preparation and storage of items.
- Review daily food production against forecasts.
- Adhere to safety regulations and promote a safe working environment.
- Maintain personal hygiene and professional appearance.
- Collaborate with team members and be flexible with duties as required.
