Qualifikationen

• Experience as Sushi Chef or Sushi Cook in a high-volume restaurant.
• Expertise in sushi preparation and traditional Japanese techniques.
• Ability to multi-task in a fast-paced environment.
• Strong presentation, freshness, and quality standards.
• Knowledge of fish handling and HACCP guidelines.

Aufgaben

• Prepare sushi, sashimi, maki to high standards.
• Maintain fish quality and cutting techniques.
• Ensure knife cuts, portions, plating consistency.
• Follow food safety, sanitation, HACCP guidelines.
• Manage mise en place and sauce production.
• Maintain clean sushi station during service.
• Monitor seafood inventory for freshness.
• Collaborate with BOH and FOH teams.
• Engage with guests and offer sushi recommendations.
• Perform tasks from Chefs and Kitchen Leadership.
