Ideal candidates have significant sushi preparation experience, knife skills, and a solid understanding of food safety. This on-site role requires availability on nights, weekends, and holidays, with growth opportunities within a renowned global brand.

Qualifications

• Previous experience as a Sushi Chef or Sushi Cook in a high-volume restaurant.
• Expertise in sushi preparation, knife skills, and traditional Japanese techniques.
• Understanding of food safety, HACCP, and storage practices.
• Ability to multi-task and maintain presentation, freshness, and quality.
• Willingness to learn new techniques and contribute to menu innovation.

Responsibilities

• Prepare and execute all sushi, sashimi, and maki rolls to Benihana standards.
• Maintain fish quality knowledge and proper cutting techniques.
• Ensure consistency in knife cuts, portions, and plating.
• Follow food safety, sanitation, and HACCP guidelines.
• Manage mise en place, rice cooking, and sauce production.
• Keep a clean, organized sushi station for high-volume service.
• Monitor seafood and produce inventory for freshness.
• Collaborate with BOH and FOH teams for a seamless dining experience.
• Engage with guests with sushi recommendations when appropriate.
