Job summary

Portillo’s is seeking a Restaurant Manager to lead a fast-paced team, ensure top-tier hospitality, and uphold sanitation and safety standards. The role emphasizes coaching, scheduling, and daily operations to deliver memorable guest experiences in a high-volume environment.

Ideal candidates have 1–3 years of management experience, strong communication, and a solid understanding of P&L. Flexible to work 50+ hours, including nights and weekends, is required.

Qualifications

• 1–3 years of Restaurant Management experience in a high-volume, fast-paced setting.
• Knowledge of restaurant operations, recruiting, scheduling, food planning and preparation, sanitation, food quality and security.
• Aptitude for leading, coaching and driving excellence at every level.
• Understanding of P&L and restaurant operations.
• Pass required sanitation and responsible alcohol vending courses.
• Great communication skills; fluency in reading, speaking, and understanding English.
• High school diploma or equivalent.
• Flexibility to work 50+ hour weeks, rotating shifts (nights, weekends) and holidays.

Responsibilities

• Model operational standards and execute critical behaviors to run great shifts and create lifelong memories for guests and team members.
• Motivate and manage team members to provide highest level of hospitality.
• Demonstrate leadership with a focus on coaching and achieving excellence.
• Foster team engagement through recognition and communication.
• Ensure compliance with sanitation, food and restaurant safety regulations.
• Train Portillo’s team members on restaurant operations.
• Deliver exceptional guest experiences and foster connections.
• Execute shift planning, scheduling, training, daily routines, opening/closing, and cash handling.
• Plan and make decisions around inventory, budgeting and labor.
