Qualifications

• Experience as pitmaster, meat cutter, line cook, expediter, or prep cook required.

Responsibilities

• Own the pit and meat operation and run smokers with skill and consistency.
• Cut and portion to spec and monitor quality of every pound of smoked meat.
• Manage inventory and food waste and uphold safety and sanitation standards.
• Follow procedures to the letter to protect brand quality and safety.
