Qualifications

• Experience as pitmaster, meat cutter, line cook, expediter, or prep cook.
• Disciplined and consistent, with pride in the craft.
• Able to thrive in a hands-on, high-energy kitchen.

Responsibilities

• Own the pit and meat operation and run smokers with skill.
• Cut and portion to spec and monitor quality of every pound.
• Manage inventory and food waste in the pit and meat area.
• Follow procedures to maintain safety and sanitation.
