Job summary

Away Resorts is seeking a Kitchen Team Leader (Breakfast) to lead a busy kitchen in a high-volume holiday park. You’ll drive standards, mentor the team and ensure breakfast service runs smoothly, with a focus on consistency, speed and guest satisfaction.

You’ll manage a BOH operation, coordinate with Line Chefs, monitor stock, and champion health and safety while thriving under pressure in peak periods.

Qualifications

  • At least Level Two Hygiene Certificate.
  • Experience of working as a chef in a busy, fast-paced kitchen.
  • Experience of stock control and ordering.
  • Exceptional communication and organisational skills.
  • An eye for detail and able to think on your feet.
  • A customer service ethos.
  • Resilience under pressure.

Responsibilities

  • Oversee the Back of House (BOH) operation and be the main point of contact on shift.
  • Prepare and cook meals with Line Chefs and Kitchen Assistants and ensure the team comply with dish specifications.
  • Help control food margins through effective stock management.
  • Champion health and safety and hygiene policies to ensure team and guest safety.
  • Identify development needs of team members and provide coaching and support.
  • Work bank holidays and weekends as required.

What we need in a nutshell

We need someone who can lead and inspire a busy kitchen team; someone who understands that food is central to a happy holiday. Someone who is driven, is passionate in delivering standards and enjoys the camaraderie of teamwork is essential for this role; we get busy, but we never forget why we love what we do.

Someone who can lead through our teams, to engage them and set attainable goals; someone that finds solutions to problems and communicates well with both management team as well as the supporting team members.

You will need to be resilient, used to high pace/high volume, but someone that thrives under pressure and manages to keep their head and help those that need support, even in the busiest of shifts.

Who we are?

We are a very busy pub in the new forest that pride ourselves on delivering great food out to our guests quickly. We drive high volume, end even higher volume in our peak summer months, but we work together and always keep a positive attitude.

Being a holiday park, we have a diversity of guests coming through our doors but our standards never change, we offer a classic menu with a few twists to reflect the tastes of all that visit our parks.

Being the main F&B destination on site, we serve food from 9am through to 9pm, with that there are a variety of shift types available, but never a split (unless requested!) or and all day.

What you'll be doing

You will be in the thick of the action with your team, ensuring that meals are prepped, cooked and served to our exacting standards, to deliver delight to our guests. This includes:

  • Supporting the kitchen management team in overseeing all aspects of the Back of House (BOH) operation and being the main point of contact on shift
  • Preparing and cooking meals with the assistance of Line Chefs and Kitchen Assistants and ensuring the team comply to the agreed specifications of all the dishes
  • Helping to control food margins through effective stock management
  • Championing and implementing health and safety and hygiene policies to ensure team and guest safety
  • Identifying the development needs of team members and providing coaching and support to them

One more thing...holidays happen at holiday times, so you'll need to work your magic on bank holidays and weekends too.

Skills, experience and qualities you'll need

We are looking for an enthusiastic team player with a real passion for food, who can demonstrate the following:

  • At least Level Two Hygiene Certificate
  • Experience of working as a chef in a busy, fast-paced kitchen
  • Experience of stock control and ordering
  • Exceptional communication and organisational skills
  • An eye for detail and able to think on your feet
  • A customer service ethos
  • Resilience under pressure
