Overview

Cook 3 — Craigentinny Primary School

Salary: £25,322 - £25,623 (pro-rata for part time and sessional). Hours: 26 per week, 38 weeks sessional.

Responsibilities
  • Skilled cooking activities connected with the full range of meals and recipes.
  • Paperwork: completion of Cook Safe, allergen paperwork and other food related paperwork (e.g. recording temperatures, service specification).
  • Complete daily/weekly audits of the service (e.g. cleaning schedules, Covid compliance checks).
  • Stock: receiving food deliveries, checking temperature and quality of food, storing and labelling, stock rotation, checking dates to use older stock first, and occasional ordering of stock.
  • Control of hygiene within the kitchen, ensuring Cook 1s maintain high standards of hygiene and safety; inform Supervisors of any staff hygiene issues.
  • Support counter setup and presentation of the food offer and assist in the service of that food as required.
  • Cash handling (as and when required).
  • Place orders for food and non-foods as required.
  • Support the preparation and delivery of function activity as required.
  • Work with the unit manager to cater for theme days in accordance with service specifications.
Knowledge and Skills (Qualifications)
  • Assistant Cooks must hold or be working towards a formal cook's qualification (e.g. City and Guilds or SVQ).
  • Deliver to specification requirements and cooperate with performance measurement to meet overall standards; ensure Cook 1s follow service specifications.
  • Knowledge of the use of dangerous catering equipment and safe working practices; good standard of communication.
  • Applied knowledge of culinary skills within Council policy, practices, processes, and qualifications or demonstrable knowledge in key areas such as Health and Safety.
  • Demonstrate passion for high quality meals and the ability to resolve issues or make improvements.
  • Demonstrate curiosity to grow knowledge and professional development.
  • Ability to self-motivate, manage time, and deputise in the absence of a supervisor.
  • Liaison with council/other staff and incidental contact.
Environment and Work Demands
  • The duties may vary according to business demands, and the post holder may work in varying locations or perform different duties.
  • Working to tight timescales to ensure food is delivered on time.
  • Covering other units when staff are unavailable and potentially working with different staff, equipment, and serving times.
  • Working with agency staff when there are staff shortages and shadowing them.
  • Daily lifting of heavy pots and pans containing hot food or liquid.
  • Standing for prolonged periods.
  • Working in kitchen environments with extremes of temperature and noise from people and equipment.
Supervision and Management of People
  • Respond to queries from Cook 1 (Catering Assistant) and provide direction as appropriate.
  • Deputise in the absence of line manager, which may include visits to the dining centre as necessary.
Resources
  • Control the use of stock as per service specification and focus on reducing waste and environmental impact.
  • Place orders for stock and manage stock holding as required.

Line managers have additional responsibilities for identifying and controlling risks, with specialist input from H&S advisers; where risks cannot be adequately controlled, the activity should not proceed. This post is regulated work with children and/or protected adults under the Protection of Vulnerable Groups (Scotland) Act 2007. The preferred candidate will be required to join the PVG Scheme or undergo a PVG update check. An Overseas Criminal Record Check may be required if the candidate has spent time outside the UK recently. Offers are subject to satisfactory pre-employment checks.
