Location:

Regency Retirement Resorts have 8 locations in the Okanagan, including Vernon, Penticton, West Kelowna, and Kelowna. This position is on site in Kelowna.

Job Description

Under the direction of the Executive Chef, you will be performing duties in the preparation and delivery of food service to the Residents of Regency Retirement Resorts within established guidelines and procedures as assigned. The Sous Chef performs such duties as planning, preparing, storing and servicing menu items, ordering and receiving supplies and supervising Prep Cooks and Dishwashers.

Key Responsibilities
  • Maintain professional conduct, grooming, and appearance to meet resort standards.
  • Prepare food items according to established menus, recipes, and quantity quotas.
  • Plan cooking schedules to minimize time between preparation and serving.
  • Cook a variety of food items using various methods (e.g., roasting, frying, baking).
  • Carve meat and poultry and ensure proper portioning to meet recipe yields.
  • Present finished dishes that align with the quality standards of the resort.
  • Manage food storage and ensure proper rotation to reduce waste and spoilage.
  • Assign tasks to Prep Cooks and Dishwashers for efficient kitchen operation.
  • Check supplies for quality, return subpar items, and store them appropriately.
  • Clean work areas and wash cooking utensils and equipment.
  • Report any damaged or malfunctioning kitchen equipment to the Executive Chef.
  • Foster a positive team environment through cooperation with staff and departments.
  • Assist with new employee orientation and perform other related duties as assigned.

Education and Experience
  • Graduation from a recognized 12-month program in cooking.
  • Food Safe.
  • Two years recent related experience or an equivalent combination of education, training and experience in the hospitality industry.
Skills for Success
  • Able to communicate effectively both verbally and in writing.
  • Mental and physical ability to perform the duties and responsibilities of the position.
  • Able to plan and organize meal service.
  • Able to plan and collaborate with the Executive Chef in menu planning taking into account dietary restrictions and preferences.
  • Monitor food inventory levels and assist with ordering supplies as needed
Salary and Hours of Work
  • This is a full-time position (37.5 hrs per week). This position requires flexibility to include occasional evenings, weekends, and holidays to accommodate resident needs and special events.
  • The hourly wage for this position is $27.00.
