Overview

Our Assistant Director of Food & Beverage will have a strong entrepreneurial spirit, be innovative, creative, results driven with a desire to exceed customer expectations in this luxury environment. The successful candidate is highly energetic, strategic, and front facing. We are looking for a leader who will work alongside our Director of Food & Beverage to rally the team and create vibrancy, style and buzz with our unique product and exceptional service. This position requires consistent attention to detail and outstanding organizational skills to ensure flawless execution. The scope includes multiple outlets including outdoor venues and banquets. Previous related experience in a luxury setting is required.

Salary Range: $85,000 - $95,000 per annum based on experience

Responsibilities
  • Lead, mentor and train the Food & Beverage Operations team
  • Ensure Food & Beverage relevant brand standards are maintained
  • Strategize on new products and service offerings
  • Create unforgettable experiences for our guests
  • Layout goals and develop strategies to accomplish them
  • Forecast staffing needs and related expenditures based on departmental requirements
  • Forecast workloads and review work schedules prepared by direct reports for all Heartists in the division
  • Assist Department Heads in developing and reviewing job descriptions; update as required
  • Oversee initial and ongoing training of all Heartists through mentorship and coaching of managers; conduct regular training for management and hourly staff
  • Maintain standards, performance, conduct, dress code, appearance, sanitation, etc., according to established policies
  • Conduct annual performance reviews for the leadership team and assist direct reports with their reviews
  • Communicate hotel policies and changes in a timely manner
  • Manage and control overall expenses of the outlets, focusing on revenue and profitability
  • Ensure Department Heads and Heartists have total knowledge of menu items and wine list
  • Oversee payroll accuracy and related reporting
  • Collaborate with the Executive Chef and Sous-Chefs to ensure top quality and uphold standards
  • Conduct quarterly menu analysis and menu engineering to maximize revenue and profitability
  • Develop annual marketing and promotional plans with Sales & Marketing support
  • Drive revenue-generating initiatives across Food & Beverage
  • Review departmental logs and emails daily
  • Maintain minimal waste and control inventories and par stocks
  • Ensure equipment is well maintained and report deficiencies
  • Manage wine stock, list elaboration and maintenance
  • Strong financial acumen; working knowledge of Profit and Loss statements
  • Prepare divisional budgets, revenues and expenses and monitor/pivot as required
  • Participate in hiring, retention and disciplinary processes
  • Handle guest complaints to achieve maximum results while maintaining service standards
  • Develop and analyze procedures and promotions to improve guest patronage
  • Maintain effective communications between operating departments
  • Network with peers regionally and industry-wide; review trends for new service and product opportunities
  • Promote health, safety and wellbeing; understand crisis management procedures and serve on the hotel crisis management team
  • Adhere to ALLSAFE health and safety protocols and train colleagues accordingly
  • Other duties as assigned
Qualifications
  • Previous Food & Beverage experience in a senior leadership role in restaurant operations and banquet operations
  • Multi-unit experience is an asset
  • Excellent wine and beverage knowledge; sommelier diploma preferred
  • Computer literacy in Microsoft Windows applications
  • University/College degree in a related discipline preferred
  • Excellent communication and organizational skills
  • Strong interpersonal and problem-solving abilities
