Supporting the Sous Chef, this role ensures consistent quality, creativity, and innovation in all dishes, reflecting the high standards of an island resort destination. The Junior Sous Chef will oversee daily kitchen operations, lead junior team members, and uphold the brand promise of offering guests refined, memorable dining experiences.

Culinary Excellence
  • Assist in designing, preparing, and presenting menu items for restaurants, banquets, and in-room dining.
  • Maintain the highest standards of taste, quality, and presentation in every dish served.
  • Support the Sous Chef in developing creative concepts that reflect international and Mediterranean influences, aligned with the luxury positioning of voco Monaco Dubai.
Team Leadership & Training
  • Supervise, train, and mentor junior chefs, commis, and kitchen stewards.
  • Promote teamwork, positivity, and a service-oriented approach within the culinary team.
  • Lead by example with strong work ethic, discipline, and passion for culinary arts.
Operational Support
  • Assist with kitchen scheduling, inventory, and stock rotation (FIFO).
  • Ensure proper portion control and minimize wastage to achieve food cost targets.
  • Coordinate with purchasing and receiving to ensure high-quality ingredients.
Safety & Hygiene
  • Enforce compliance with HACCP, Dubai Municipality regulations, and brand standards.
  • Ensure cleanliness, sanitation, and safe working practices are maintained across all kitchen areas.
  • Conduct regular checks on food storage, preparation, and service procedures.
Guest Experience & Resort Focus
  • Work with the F&B team to cater to diverse guest preferences, including VIPs and special dietary requirements.
  • Contribute to themed dining experiences, events, and beachside culinary concepts unique to The World Islands.
  • Uphold voco’s brand promise of a warm, thoughtful, and stylish guest journey through innovative food offerings.
Requirements
  • Diploma/Degree in Culinary Arts or equivalent.
  • 3–5 years of culinary experience, with at least 1–2 years in a supervisory role within a luxury hotel or resort.
  • Strong knowledge of Mediterranean, international, and fine-dining cuisine.
  • Proven ability to lead, inspire, and develop a multicultural team.
  • Excellent organizational, communication, and multitasking abilities.
  • Knowledge of HACCP, food safety, and kitchen hygiene standards.
  • Flexibility to work in a fast-paced resort environment, including weekends and holidays.
  • Ability to stand for extended periods and operate kitchen equipment safely.
