About the Job

An exciting opportunity has arisen for a Chef De Cuisine to join Pastry team in Jumeirah Zabeel Saray.

The main duties and responsibilities of this role include:

  • Leads and supervises pastry kitchen staff, conducting daily briefings and ensuring communication of culinary standards, tasks, and operational updates.
  • Develops menus and recipes, organizes food tastings, and ensures all dishes meet quality, presentation, and portion‑control standards.
  • Oversees daily food production, storage areas, and inventory‑monitoring spoilage, turnover, and compliance with health and safety regulations.
  • Manages service operations by running the hot pass, supporting the team, and ensuring consistent execution of established culinary standards.
  • Conducts staff training on equipment usage, hygiene practices, and operational procedures, ensuring proper documentation and follow‑ups.
  • Maintains administrative controls, including logbooks, checklists, and monitoring extra hours, while performing additional duties requested by management.
About You

The ideal candidate for this position will have the following experience and qualifications:

  • Over five years of pastry experience in a five‑star international hotel, including two years in a senior pastry leadership role (Desired).
  • Completed pastry‑focused chef training or apprenticeship of at least one year.
  • Holds a Diploma in Hotel Management or Pastry/Baking Management.
  • Proficient in Microsoft Word and Excel, with added advantage of experience in recipe or pastry production software.
  • Strong leadership, organization, communication, and high attention to detail in line with pastry quality and food safety standards.
