Job description

An Assistant Restaurant Manager with Waldorf Astoria Hotels and Resorts is responsible for managing restaurant operations to deliver an excellent Guest experience while training staff and working within budgeted guidelines. This position oversees all Food and Beverage operations to ensure high standards of quality and service.

What will I be doing

As an Assistant Restaurant Manager will collaborate with the Restaurant Manager and culinary teams to maintain top‑tier service while adhering to budgetary guidelines and cost control. A Restaurant Manager would also be required to manage, train and develop team members. Specifically you will be responsible for performing the following tasks to the highest standards:

  • Oversee the day‑to‑day of the Lobby Lounge restaurant operations ensuring efficiency, consistency and adherence to high‑quality standards.
  • Manage food cost controls to contribute to Food and Beverage revenue.
  • Ensure compliance with all health, safety and hygiene regulations.
  • Lead, train and inspire a multicultural Food & Beverage brigade fostering a culture of excellence, teamwork and innovation.
  • Conduct regular performance reviews and support team members' growth and development.
  • Ensure the highest level of guest satisfaction through exceptional service.
  • Collaborate with the Culinary team to tailor experiences for special events and themed dining.
  • Recruit, manage, train and develop the Restaurant team.
  • Manage guest queries in a timely and efficient manner.
  • Work within budgeted guidelines in relation to Food and Payroll.
  • Drive sales to maximize budgeted revenue.
  • Develop menus with other members of the F&B team.
  • Accountable for monthly stock takes.
  • Incentivize team members to maximize sales and revenue.
  • Set departmental targets and objectives, work schedules, budgets and policies and procedures.
  • Evaluate guest satisfaction levels with a focus on continuous improvement.
  • Ensure communication meetings are conducted and post‑meeting minutes generated.
  • Be environmentally aware.
  • Assist other departments wherever necessary and maintain good working relationships.
  • Comply with hotel security, fire regulations and all health and safety legislation.

  • Minimum 35 years of experience in a high‑end or luxury hotel fine dining lobby lounge restaurant or an equivalent setting.
  • Proven track record of leading a food & beverage service team in a fast‑paced environment.
  • In‑depth knowledge of food & beverage operations including menu planning, inventory control, cost management and beverage section with a focus on Asian cuisine and beverages.
  • Strong understanding of food and beverage trends, guest preferences and cultural sensitivity in culinary practices.
  • Formal food & beverage training or equivalent certifications.
  • Exceptional leadership and organizational skills.
  • Strong creativity and passion for service innovation.
  • Ability to manage stress in a high‑pressure environment.
  • Excellent communication and interpersonal skills.
  • Keen eye for detail and commitment to quality.
  • Ability to work a variety of shifts including weekends, days, afternoons and evenings.
